An Italian chef in Australia lost his job after refusing to serve pineapple on pizza, arguing the controversial topping insulted his culture.

Davide Tamburella was head chef at La Costa, a now-closed Brisbane restaurant, when he was dismissed on May 20. According to a ruling by Australia's Fair Work Commission, one of the concerns raised by the restaurant's management was his refusal to prepare ham and pineapple pizzas for a customer hosting a large event.

Tamburella "considers, as an Italian, that putting pineapple on a pizza is an insult to his culture," as cited in the commission ruling reviewed by BCC.

Chef Refused Pineapple Pizza Order

The restaurant's managing director, Elliot Ingram, recalled the event, stating, "We had a large function come in, and they were spending in excess of $15,000, and the guy paying for the whole thing says: 'Look, I need to get some ham and pineapple pizza.'"

Tamburella argued that he should not have to follow instructions that he considered offensive to his culture. He reportedly asked Ingram to "check how important it is for Italians not to put pineapple on a pizza."

The chef acknowledged that this was the third time in four years he had refused to follow the instruction. However, the disagreement over pizza toppings was not the only issue raised by management. The restaurant also cited concerns about Tamburella's alleged use of inappropriate language, communication style, and "escalation of frustration in the workplace."

Unfair Dismissal Claim Rejected

Tamburella subsequently challenged his dismissal, arguing that it violated Australia's Fair Work Act. He also alleged that his termination was partly motivated by a workplace injury that left him with two fractures in his right hand after he struck a metal handrail.

However, Fair Work Commissioner Jennifer Hunt dismissed his application after finding that it had been filed outside the required timeframe and did not qualify for an extension under exceptional circumstances.

Meanwhile, Ingram maintained that the dispute involved more than a single pizza topping, with the former restaurant owner reaffirming other workplace concerns. La Costa eventually closed in July, with Ingram citing the high cost of operating in Brisbane's Fortitude Valley.

Tamburella has since found work as a head chef at another Italian restaurant in Brisbane. Interestingly, pineapple does not appear on its menu.
